Breakfast Low Carb Recipie #1: Eggs Bennidict

Eggs are a great source of protein, so why not add a little Hollandaise sauce and turkey bacon (I don’t eat pork) and have a low carb Eggs Benny!

You will need to poach your eggs, and crisp up your turkey bacon, you will want this to be just finished as your Hollandaise is ready. Place the turkey back down on the plate, poached eggs on top of the turkey bacon, then top with the Hollandaise sauce. Yes, traditionally it is served with an english muffin or bagel – but that is not in the spirit of low carb – so we leave it out! But you can add it back easily for those in your household who can enjoy this dish without the low carb part.

My Hollandaise recipe:

Ingredients:

1 cup butter (melted)

4 egg yolks

2 Tbsp lemon juice

1/4 tsp salt

Small dash of Dijon mustard

Fresh Parsley chopped

Fresh Tarragon Chopped

Instructions:

Mix the egg yolks, lemon juice, salt, mustard, parsley and tarragon.

Slowly add hot melted butter (be careful when melting not to burn!)

Whisk all ingredients together until thick.

Serve immediately over your poached eggs, turkey bacon.

Also wonderful over blanched asparagus and a small amount of cherry tomatoes which you can use instead of bread!

Topping with grated cheese is also good!

This recipe is quick and easy, and you can easily store the sauce to use later so that it’s even quicker and easier after that.

It’s a perfect low carb recipe that tastes delicious!

  1. I have tried Atkins Diet, South Beach Diet and other forms of Low Carb diet. They are all good for the general health and for maintaining a healthy weight.
